Unfortunately once again my guest blogger didn’t happen.  BOO!  Maybe one day.

**No pictures today because I am still “recovering.”**

Since Monday I have been working hard to get the junk out of my system.  Even though I did pretty good at Disneyland I still put on four lbs.  How that happened after being sick I will never know…maybe the Blue Bayou or the Zermatt anniversary buffet had a greater impact than I thought.  The good news is…I put on 8 lbs last time I went to Disneyland.  So this was actually improvement :)   I am not sure how I can put 8 lbs on in 5 days but somehow the magic of Disneyland can do anything.

It has been a little tough to say good since I have been back.  There is Easter candy and sweets everywhere!  I am ready to hit it hard though.  I only have 25 lbs to go before hitting my goal weight.  If I go at 2 lbs. a week I could reach my goal by the end of May beginning of June.  This could be my first ever bikini body.  No…this WILL BE my forever bikini body…or until kids at least.

My work is doing The Biggest Loser.  Not only do you participate on teams but you complete individually.  If your team loses the most…prize.  If you loss the most from your gender…prize.  A nice $100 prize!  I weighed in this morning and now I am going hard!  I will win that money!  Wish me luck!

I eat a lot of chicken and am always looking for new ways to season or cook it without it adding fat or calories to it.  Check out this delicious fat free recipe I found.

 

Quickest Roasted Chicken Dinner 

2 chicken breasts with skin and on the bone

4 paper thin lemon slices

8 cloves garlic, thinly sliced

4 sprigs thyme or any fresh herb you like

Coarse grained salt and cracked black pepper

1 cup fat-free, low sodium chicken broth 1 lemon, juiced

 

–Preheat oven to 450 degrees.

–Slide 2 fingers under chicken skin and loosen enough to tuck 2 lemon slices, 4 garlic slices and 1 thyme sprig underneath the skin, directly over the breast meat of each chicken breast. Season chicken generously with salt and pepper.

–Place chicken in 9 by 13- inch glass baking dish. Pour 1 cup chicken broth, remaining sliced garlic and thyme sprigs in pan bottom.

–Place in oven and roast until chicken is golden brown and cooked through, about 25 minutes. Remove chicken from pan and set aside.

–Pour pan juices into a small sauce pot. Add lemon juice. Reduce over medium high heat until sauce has thickened to almost a glaze. Taste and adjust seasonings with salt and pepper.

–Pour juices over chicken and serve immediately.

I am in Disneyland and you know I am not working on my beach body.  WHAT!?  They have Mickey bars here :D

Actually I have been doing quiet well.  I didn’t want to have to start from scratch when I got home.  I have been waking up early every morning and doing an hour of cardio…thanks to the invention of work out DVDs and the early birthday present from Mr. Robertson.  I have also been eating what I normally would for breakfast and two of my snacks.  As for lunch and dinner, I just do my best to pick smart choices and watch portions.

Yesterday though, I must have gotten a little out of hand.  For lunch we ate at the Pizza Port.  I had one slice of ham and pineapple pizza and some foccacia bread.  Later I had 1/2 of a frozen lemonade (50 calories!!  Beats a Mickey Bar).  For dinner we ate at the Big Thunder Ranch Barbeque.  It is “all you care to eat” and delicious.  I ate corn, cornbread, ribs, chicken, sausage, coleslaw, and baked beans.  Then shared an apple cobbler with the family for dessert.  I felt like I over ate but I didn’t feel sick….until about 2:00 am!  Ever since then I have spent more time in the bathroom then in bed.  Now my muscles ache, my throat kills, my booty is rubbed raw (TMI, I am sure), the room smells, and my hubby is out playing while I stay at the hotel. 

Did I eat something wrong?  Did I eat too much?  Was it heat stroke?  Is my body showing me it will get skinny whether I like it or not? :)   Whatever the reason, I am sick.

I am going to try to put on my big girl panties, suck it up, and meet up with Adam but unfortunately I don’t think I will be going on too many rides today.

 

BUT here is some good news.  Look who I ran into at the Pizza Port!  I was so excited that I got all little girl giddy and had sweaty palms.  (Weird since I have meet tons of famous people before.)

Joe Munoz and Todrick Hall from this season of American Idol.  I know that they are both gone, but they were good.

Despite liking the fact that the scale in not taunting me every time I step foot in the bathroom, I secretively miss it.  In fact, I almost made my husband pull it out of hiding.  I just wanted to see my progress…good or bad.  BUT, I sucked it up and made it another week without my favorite enemy.

Weight Lost: .6 lbs

Total Weight Lost: 25.6 lbs.

I know, I know!  I didn’t hit my 150s mark this week but HEY! I didn’t gain!  I lost almost 1 lb.  AND  I ate a whole bag of Easter candy.  You know the eggs that are crunchy chocolate on the outside and yummy soft chocolate inside.  I bought a bag on Saturday night convinced that I would be good and only have a couple a day.  Well I ate all of them throughout the day on Sunday.  So to not have gained and still lose almost 1 lb.  I am happy.

Next week I will be in Disneyland so I will not be able to do Fat Free and Fit Friday until March 26th.  Does anyone want to be my guest blogger that day?

Recipe Time!

Fat Free Baked Rice Pudding

I LOVE LOVE LOVE rice pudding!

Ingredients

  • Vegetable cooking spray
  • 1/2 c Short-grain rice; uncooked
  • 3/4 c Sugar
  • 4 1/2 c Skim milk
  • 12 oz Evaporated skim milk; canned
  • 1 tsp Vanilla extract
  • 1 tbsp Cornstarch
  • 1/4 tsp Grated nutmeg
  • 1/4 tsp Ground cinnamon
  • 1 pinch Salt; optional
  • 1/2 c Raisins; optional

Preparation

–Preheat oven to 300F degrees.

–Sprinkle rice over the bottom of a two-to-three quart ovenproof baking dish.  Add sugar, fresh and evaporated skim milk, and vanilla to rice, stirring well to combine.

–Sprinkle cornstarch over milk a teaspoon at a time, stirring well to dissolve after each addition. Stir in nutmeg, cinnamon and salt.

–Bake one hour, stirring every 20 minutes to prevent rice from sticking to bottom of dish. Increase heat to 350 degrees. Stir in raisins if using and bake an additional 45 minutes to an hour continuing to stir after every 15 to 20 minutes.

–Serve hot, warm or cover and refrigerate to serve cold.

Last week I got rid of the scale.  That was a tough little thing for me.  I wanted to see my progress.  I felt like I was loosing and wanted a little self esteem booster.  After waiting a week, I got to weigh in.  Here are the results:

This was after a 2 lb weight loss.  Since these pictures I had a mental breakdown….hence the scale disappearing.  I have put my head down and really worked hard.

  Weight Lost: 2.9 lbs.

  Total Weight Lost: 25 lbs.

I was really excited to hit this weight again.  This is where I was before Halloween, Thanksgiving, Christmas, New Years, Super Bowl Sunday, and Valentine’s Day.  Finally back to where I was!

My goal for this coming week…get in the 150’s.  THAT would be amazing!!

Ready for a really great fat free recipe!?  Look at this.

Fat-Free Oatmeal Cookies

1 cup Quick oats
1/2 cup White flour
1/2 cup Whole wheat flour
1/2 tsp. Baking soda
1/2 tsp. Salt
1/2 tsp. Vanilla
1/2 cup Brown sugar
1/4 cup White sugar
1/4 cup Raisins
1/2 cup Apple sauce
2 tsp. Egg replacer powder
2 tbsp. Water

Preheat the oven to 375.

Mix the dry ingredients and the raisins. Mix the egg replacer with the water. Add it and the apple sauce to the dry ingredients. Drop onto a non-stick cookie sheet (lightly coated with oil, if necessary). Bake for 12-15 minutes.

Apologizes for the lack of Fat Free and Fit Friday post last week.  I totally spaced it.  I must have been or something…it is a blur actually.

This week there will be no photo shoot.  Sorry if that is disappointing but here is the reason why…#1 I was at work at 7:30 this morning and I don’t think my husband would have appreciated me getting him out of bed to take a bikini shot of me.  #2 Yesterday I had a little mental breakdown and didn’t really want to step into a bikini this morning.

Mental breakdown?  Why?, you ask.  Well let me explain.  As you may know losing weight is ALWAYS a battle with me.  (If you want to read more on that read THIS) I have been on my new “lifestyle change” since the end of August.  When I started I had high hopes to be down 50 lbs by the middle of February.  Well yesterday I realized that I missed my goal.  This caused a little bit of emotions to flow out of my eyes…then due to Aunt Flo visiting this week a little bit more came out of my eyes.  Then I started to realize just how frustrating losing weight is.  I feel like I work so hard to keep the scale dropping in order to hit my goal but always hit a plateau…and this happens with every diet/ lifestyle change.

It isn’t that I feel like my body isn’t in good shape or like I am grossly obese, I just want to look athletic and healthy and not like at one point in my life I was athletic and healthy…make sense?  I don’t want to look like a worn out athletic….because I STILL AM an athlete.

So yesterday my husband got rid of the scale.  I know it may seem stupid but that thing can be a mood changer.  I could wake up and think, “Today is going to be great.”  Then I step on the scale and suddenly I don’t feel so great.  However, when the scale is down, I am elated with excitement.  So Adam and I decided that for both of us to maintain our sanity, the scale had to go.  I am only allowed to weigh in when I go and see Dan(the guy who is helping me reach my goal.)  Also I am just taking it one month at a time.  No more looking way into the future and setting goals for months from now.

With that said, I DID workout this week.  In fact on Saturday I ran 6 miles in one hour!  It seems like it is getting easier and easier.  In fact, I wasn’t sore on Sunday—minus my inner thighs which only felt the burn of the inner thigh machine at the gym.  Here is my playlist for the week:

Fat Free recipe time!

Fat Free Vegetable Soup

Only 68 calories per serving!

Ingredients
  • 14 cups water
  • 2 onions, chopped
  • 2 large carrots, sliced
  • 2 potatoes, peeled and cubed
  • 2 green bell peppers, diced
  • 1 (28 ounce) can whole peeled tomatoes with liquid, mashed
  • 1 tablespoon chicken bouillon powder
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons curry powder (optional)
  • 3 cups finely shredded cabbage
  • 2 stalks celery, chopped
  • 1 1/2 cups cauliflower florets
  • 3 teaspoons dried dill weed
Directions
  1. In a large cooking pot, measure water, add onions, carrots, potatoes, green peppers, mashed tomatoes, chicken bouillon powder, black pepper, and curry powder. Boil for 20 minutes or until carrots are tender.
  2. Add shredded cabbage, chopped celery, cauliflower florets, and dill weed, and cook an additional 10 to 15 minutes. If soup is too thick, add more water and bring to boil. Adjust seasonings to taste.

Ok, I am not going to lie.  This week has been hard.  First the Super Bowl (chips, popcorn, ranch dip, brownies) and now the Valentine’s Day treats.  I am CRAVNG chocolate and carbs so bad!  However, throughout the going insane week, I managed to drop some weight.

Week’s weight loss: 2.1 lbs.

Total weight loss: 22.1 lbs.

2.1 lbs is nothing to cry about for sure, but I was secretively hoping to drop 4 or 5.  Maybe this week…if I can continue to say not to sweets.

Just a side note: what is up with my boobs?!  The left is all nice and round and the right is just chillin’…nice week I will pay more attention to how the girls are sitting :)

This weeks fitness goal: to hold the wall sit for 60 seconds.

I found out the hard way that Pandora does not work inside the gym. :(   I must not get good enough reception for it to work.  That day I settled for TV.  I like watching TV when I workout…the problem…when a commercial hits, I get bored.  Then I look at the time.  I look at the clock about 4 more times before the commercial break ends.  It is just easier to listen to music and find someone interesting to watch.  (I love watching girls who come to the gym for the scene and not to work out.  You know the ones who show up with hoops in, little shorts, and their hair down and curly.  Come on!)

Fat Free Recipe Time!

FAT FREE DEVILED EGGS

Who can turn these down!?

8 whole eggs

1 – 15 oz. can chickpeas

1/4 c finely chopped parsley

4 tsp. whole grain mustard

1/2 tsp. grated lemon zest

1/2 tsp. minced garlic

1/8 tsp. black pepper

1 Tbsp. minced red onion

1 Tbsp. minced capers

–Hardboil eggs normally at a simmer and cook about 12 minutes. Drain and cool in cold water.

–Peel the eggs and then cut in half lengthwise. Remove the yolks and discard.

–Drain garbanzo beans, reserving 1/3 c liquid.

–In a food processor or blender, puree beans, parsley, mustard, lemon zest, garlic and pepper until smooth. Transfer to a bowl and stir in red onion and capers. Taste and adjust seasoning.

–Fill egg halves with about a tablespoon of filling and sprinkle with paprika.

**Variations:

–You could add celery seed.

–Substitute minced green onions for the red onion.

–Use fresh herbs such as lemon thyme or a little cilantro to replace part of the parsley.

–Add green peppercorn dijon mustard in place of the plain mustard.

**You could even use this as a sandwich filling.  Use Sara Lee Delightfuls to keep it low cal!

Fat Free and Fit Friday

I have decided to start a new Craving Chocolate and Lazy Days tradition.  It is going to be called, “Fat Free and Fit Friday.”  As you may know I struggle to lose weight.  If you don’t know that read Another New JourneyThis journey was going well…until the holidays came.  Then all my past issues came up—I can’t say no to food.  Especially ones that involve sugar or the word “chocolate.”

So now after being off my path that I was doing so well traveling, I start again.  Good news is I am not starting from the mouth of the trail.  I am just about at the same spot as I was when I started losing my footing.  (Not too shabby for three months of pigging out…literally.)

One part of Fat Free and Fit Friday will include a weekly update on my “lifestyle change.”  I will include a picture and weight update.  This is a big step because I am not always comfortable with my body.  I am going to suck it up though and post my bikini body.  Note:  I don’t have a bikini body…read here

Another part of Fat Free and Fit Friday will include my recent workout music mix.  This will be a fun time to find songs you might not have heard of or suggest songs others and I might enjoy working out to.  Try out the playlist for yourself and let me know what you think!

Lastly, Fat Free and Fit Friday will include a fat free recipe!  I love discovering new recipes and learning what I like and don’t like.  This will be a great opportunity for you to share fat free recipes too!

Today was my first day back to being good.  No cheating!  I AM going to be good.  Here is what I looked like when I started down my new path at the end of August 2009.P1010460

I bought this bikini before I got married (which was March 2009).  Let’s pray that I did not look like this when I wore it for the first and only time before this picture.  It is also important to note that this has only been worn once outside of the house…in Cancun where I didn’t have to worry about people recognizing me.

I am smiling?  Honestly?  Nah!  Must be a trained thing.

You know, until just barely while I was writing this, I have had a hard time seeing the difference 25 lbs. made.  Putting the pictures side by side like this just boosted my self esteem a little.  Hey!  Fat Free and Fit Friday is beginning to work!

See…only up 5 lbs.  You can tell a little in my tummy…that is usually my first place to gain.  I can also see a little gain in my thighs…the dreaded knee fat.

Tonight I went for a run…51 minutes without stopping!  Hey that is good!  Last time I ran on a treadmill I went 6 minutes and then had to walk.  Tonight I ran outside.  I do so much better outside than on a stupid treadmill.  This morning I was really excited to post a playlist, but then I forgot to plug the old ipod in.  With zero ipod battery, I had to use my Palm Pre Pandora app.  I just put it on “quick mix” and went with what I got.  Here was today’s line up:

Ok…here is the good part…the food part!

Here is a recipe for FAT FREE CARAMEL CORN

Ingredients:

2 cups light brown sugar  {I prefer Splenda}

3/4 cup water

1/2 tsp. vinegar

1 tsp. vanilla

1/4 tsp. baking soda

Popcorn…I prefer using an air popper and salt and butter free kernels…if you like very caramel-ly corn use less popcorn…if you want just a little caramel taste use more

–Combine the sugar, water, and vinegar in a 2-qt. saucepan, bring to boil (stirring to dissolve sugar completely).

–Continue boiling and stirring until syrup thickens and reaches the "hard-crack" stage — consult the candy-making section of any comprehensive cookbook for description and candy-thermometer temperature. (One way of determining readiness is when the syrup "makes threads" when dropped off the tip of a spoon OR when a drop allowed to fall into a cup of cool tap water forms a ball instantly. It takes practice) — cook too long and the coating will be granular; cook not long enough and it’ll be sticky.

–When the syrup reaches the desired stage, take it off the burner, IMMEDIATELY stir in vanilla and baking soda (the soda interacts with the vinegar’s acidity and makes the syrup light and sort of foamy).

–Pour gradually over popped corn while stirring with a long-handled spoon to distribute the coating (or have someone else do the stirring or pouring). This stuff is VERY HOT and will stick to you and inflict deep burns so be careful!

**Variations—use flavored extracts for different flavored coated corn!**
